Quick, Easy & Healthy Food Recipes That You Can Make in Your Dorm

Going off to college is very exciting! You get to meet new people, explore your new home for the next few years, and go to all the welcome week events! College brings some worries to the mind as well. I know one at the top of my mind when heading off to college was the dreaded freshman 15. Take it from me, it is a very real thing. I thought I was invincible and that those extra slices of pizza wouldn’t make a difference and boy was I wrong!

Are the extra pounds coming from the one too many cookies on your way to class? Maybe the dining hall buffet food? How about the two large iced coffees you had today? Hmm...let’s be honest, it is probably a combination of all of the above. Well, do not worry! I have some quick and simple recipes to help you stop snacking and get a healthy meal right in your dorm room! Almost all of them involve my fav, a tortilla! I know the struggle of not having a real kitchen, so the microwave will be your best friend when cooking.

Breakfast

A good, healthy breakfast can set your mood for the whole day! They aren’t lying when they say breakfast is the most important meal of the day. Have you ever made an egg in a mug? How about a quesadilla in the microwave? No? Well, you’re about to learn how to!

Just crack an egg into a coffee mug, pour in some milk, beat with a fork, and microwave in 45-second intervals until it is done. While that is cooking, get your whole wheat low carb tortilla ready.

When the eggs are done, transfer them to the tortilla. Add some of your favorite extras like ham, cheese, ketchup, whatever you may like! Fold it in half and pop back in the microwave for 20 seconds. Look at that, you’re done! You can eat it while you are getting ready or take it on the go if you’re running late for the math class you can’t miss!

I can’t tell you how many times this quick, simple, and healthy meal saved me time (and a few extra calories) in the mornings. And let us be honest, your friends will be impressed with your “sophisticated” breakfast not knowing it was made in the microwave!

Lunch

Next, let me tell you about wraps. They are the best go-to quick and easy lunch option you can make in 5 minutes right in your dorm! You can make a chicken wrap, turkey wrap, ham wrap, heck even a lettuce wrap if that’s what you’re in the mood for. (You know what they say… eat your greens!) Get a bowl and add in some lettuce, kale, cucumbers, and your choice of protein and mix. Add in some salad dressing or add a layer of mayo to your tortilla before putting your greens on. Then wrap that baby up and enjoy!

Dinner

And now my favorite meal of the day… dinner! Sometimes, my dinners would also be my late-night snack after long study sessions at the library. There are so many dinner options you can make with a tortilla.

My personal favorite is a cheese quesadilla. Just grab a tortilla, add your favorite shredded cheese, top with another tortilla, and pop in the microwave for about 30 seconds. Another favorite is a pizza quesadilla. I would make cheese, pepperoni, and even margarita pizzas! Grab your tortilla, add some pizza sauce, add the toppings of your choice, and pop it in the microwave for about 45 seconds. They are a great alternative to the greasy pizza that has been sitting out at the dining hall for who knows how long!

Dessert

Healthy meals are great, but I love my sweets just as much as the next person. Earlier, I told you how to make eggs in a mug. Now I’m going to show you how to make a delicious dessert - you guessed it - in a mug! My favorite go-to dessert is microwaveable banana bread (topped with some chocolate chips of course). The recipe I use for banana bread from the Curious Frugal is gluten-free, high in protein, and only takes 90 seconds to make! All you need is an egg, almond flour, a banana (duh) and a mug to make it in!

Being trapped - I mean living - in a dorm is one of the things you remember most about college. You’ll have late nights, long talks, and questionable dietary choices, but that’s what college is for. These are just some suggestions to switch up from your typical all-day snacking diet, and we can’t recommend the versatility and convenience of tortillas and coffee mug meals enough!
